The following are all the plugins we've been using, and below them are the essential plugins we need to operate. If the essential plugins we need (not just the plugin "essentials") get updates, I'm willing to update to 1.6 once bukkit's stable, even if the other non-necessary plugins aren't updated.

So here are the plugins:
Autoplant, Backup, Citizens, Cleaner, CreativeStick, DynMap, Essentials, Falsebooks, HeroChat, iConomy, Lockette, LogBlock, MagicCarpet, McBans, MCDocs, MilkAdmin, Minecraft Remote Toolkit, MyHome, NoWeather, permissions, Residences, TelePlusPlus, Turnstiles, War, VanishNoPickup, Worldedit, and Worldguard.

Essential Plugins:
Backup, Essentials, HeroChat, Lockette, LogBlock, MCDocs, Minecraft Remote Toolkit, PERMISSIONS, RESIDENCES, Worldedit + WORLDGUARD.

A lot of these plugins tend to be updated extremely quickly, or require no update at all. However, they will say if they are compatible with MC 1.6 (or a craftbukkit build that is 815+).

Bukkit has a stable build (CB #818). Now I am just waiting on the 11 essential plugins before we restore the old world/server.
Help me check for updates! We'll be back in no time!
